During the last webmaster hangout, Google employee John Mueller answered a question related to accidentally de-indexing a site.

In particular, the author of the question asked how long the site will return to the search results if it was de-indexed due to the erroneous addition of noindex to all pages.

According to Mueller, Google tries to crawl at least a few pages of the site every few days. If the webmaster sees that the pages have not been re-indexed within 2-3 weeks, then this may be due to other problems.

In this case, it is recommended to check if there were any requests to remove content in Search Console, manual sanctions, and also to make sure that the site pages return a server response code 200.

In addition, if Google has re-indexed only part of the pages and not all, then this is normal. He just needs time.
